{"id":20,"date":"2009-08-13T00:44:55","date_gmt":"2009-08-13T04:44:55","guid":{"rendered":"http:\/\/www.veganfortwo.com\/wordpress\/?p=20"},"modified":"2009-08-25T11:01:11","modified_gmt":"2009-08-25T15:01:11","slug":"baked-ziti","status":"publish","type":"post","link":"https:\/\/www.veganfortwo.com\/?p=20","title":{"rendered":"Vegan Baked Ziti"},"content":{"rendered":"<p style=\"text-align: center;\"><span class=\"frame-outer  size-medium wp-image-25 aligncenter\"><span><span><span><span><a href=\"http:\/\/www.veganfortwo.com\/wp-content\/uploads\/2009\/08\/IMG_0858_small.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-25 aligncenter\" title=\"Baked Ziti\" src=\"http:\/\/www.veganfortwo.com\/wp-content\/uploads\/2009\/08\/IMG_0858_small-300x225.jpg\" alt=\"Baked Ziti\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.veganfortwo.com\/wp-content\/uploads\/2009\/08\/IMG_0858_small-300x225.jpg 300w, https:\/\/www.veganfortwo.com\/wp-content\/uploads\/2009\/08\/IMG_0858_small.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/span><\/span><\/span><\/span><\/span><\/p>\n<p>When I was a wee lad my mom would make delicious tofu lasagna.\u00a0 I have tried to make it myself but I just don&#8217;t have the patience.\u00a0 This stuff is similarly satisfying but seems like less work to me.\u00a0 Try it out and let me know what you think!<\/p>\n<p>First you need to make the cheesy filling:<\/p>\n<fieldset class=\"hrecipe\">\n<legend class=\"fn\">Recipe: Italian Tofu Ricotta Filling<\/legend>\n<div class=\"ingredients\">\n<h4>Ingredients<\/h4>\n<ul class=\"ingredients\">\n<li class=\"ingredient\"> 1 Pkg of firm Tofu (drained)<\/li>\n<li class=\"ingredient\"> 1\/3 c. raw cashews<\/li>\n<li class=\"ingredient\"> 1 T. lemon juice<\/li>\n<li class=\"ingredient\"> 1\/2 t. sea salt<\/li>\n<li class=\"ingredient\"> 1\/2 t. dried basil<\/li>\n<li class=\"ingredient\"> 1\/2 t. dried oregano<\/li>\n<li class=\"ingredient\"> 1\/2 t. garlic powder<\/li>\n<li class=\"ingredient\"> 1\/8 t. dried thyme<\/li>\n<\/ul>\n<\/div>\n<div class=\"instructions\">\n<h4>Instructions<\/h4>\n<ol class=\"instructions\">\n<li>Put the cashews in your food processor and grind into a fine powder.<\/li>\n<li>Add the tofu and all remaining ingredients.<\/li>\n<li>Blend until smooth.<\/li>\n<\/ol>\n<\/div>\n<p class=\"duration\"><span class=\"hrlabel\">Preparation time (duration): <\/span><span class=\"hritem\">5-10 mins<br \/>\n<\/span><\/p>\n<\/fieldset>\n<p>Next you&#8217;ll need to make the breadcrumb topping.\u00a0 This adds a nice satisfying crispy layer on top of the dish.<\/p>\n<fieldset class=\"hrecipe\">\n<legend class=\"fn\">Recipe: Cheesy Breadcrumb Casserole Topping<\/legend>\n<div class=\"ingredients\">\n<h4>Ingredients<\/h4>\n<ul class=\"ingredients\">\n<li class=\"ingredient\"> 1\/2 c. panko bread crumbs<\/li>\n<li class=\"ingredient\"> 1\/4 c. nutritional yeast<\/li>\n<li class=\"ingredient\"> 1\/2 t. sea salt<\/li>\n<li class=\"ingredient\"> 2 T. olive oil<\/li>\n<\/ul>\n<\/div>\n<div class=\"instructions\">\n<h4>Instructions<\/h4>\n<ol class=\"instructions\">\n<li> Place all ingredients in a small bowl.<\/li>\n<li> Stir until evenly distributed.<\/li>\n<\/ol>\n<\/div>\n<p class=\"duration\"><span class=\"hrlabel\">Preparation time (duration): <\/span><span class=\"hritem\">3 mins<br \/>\n<\/span><\/p>\n<\/fieldset>\n<p>Now for the final assembly.\u00a0 Here&#8217;s where we see it all come together.\u00a0 For the pasta you can use any large, tubular pasta.\u00a0 I personally prefer rigatoni to ziti.\u00a0 For the sauce I used a vegan, off the shelf tomato basil sauce.<\/p>\n<fieldset class=\"hrecipe\">\n<legend class=\"fn\">Recipe: Baked Ziti<\/legend>\n<div class=\"ingredients\">\n<h4>Ingredients<\/h4>\n<ul class=\"ingredients\">\n<li class=\"ingredient\"> 1 lb. rigatoni pasta<\/li>\n<li class=\"ingredient\"> 2 1\/2 c. &#8211; 3 1\/2 c. tomato pasta sauce<\/li>\n<li class=\"ingredient\"> Italian Tofu Ricotta Filling recipe from above<\/li>\n<li class=\"ingredient\"> Cheesy Breadcrumb Casserole Topping recipe from above<\/li>\n<\/ul>\n<\/div>\n<div class=\"instructions\">\n<h4>Instructions<\/h4>\n<ol class=\"instructions\">\n<li> Preheat the oven to 400.<\/li>\n<li> Spray or grease a 9 by 13 glass casserole pan.<\/li>\n<li> Boil pasta until firm (al dente) according to instructions on box.<\/li>\n<li> Drain pasta and put it in the casserole dish.<\/li>\n<li> Add sauce and stir until pasta coated.<\/li>\n<li> Gently fold in Tofu Ricotta Filling leaving nice chunks of cheesy goodness.<\/li>\n<li> Sprinkle breadcrumb mix on top.<\/li>\n<li> Cover with foil and bake 25 minutes.<\/li>\n<li> Uncover and bake until top is golden brown.
